democracy emerged in thear creative work. As a result, the first LOFT originated in Georgian gastronomic culture.
Tekuna Gachechiladze – My mother was a painter and I inherited Bohemian inclinations from her. My father was involved in more earthly activities. He was working in a transport sphere. It was just him who asked me to arrive here. Most of all, I like the pace, constant search and changes in this business and what is most important, I can see the results of my work immediately.
Traditional American cuisine is not so rich. But
New York is a great exception. Almost all the restaurants in the world capital represent an unimaginable mix of various cuisines, fusion of traditional, national cookery of various countries. You can order pasta, pizza in one restaurant and simultaneously taste Mexican or Chinese dishes there. And what is most interesting, all these meals are cooked not under traditional classical recipes, but with
New York interpretation. As a rule, the environment is eclectic in such restaurants and the atmosphere is very sincere. Just this
New York freedom, where everything is merged and nothing is lost, has become a source of inspiration for me.
When we were developing the LOFT project, first of all, I wanted to make a noisy, democratic, simple place, where friends would meet with each other, where we would be able to host the people of any age, with any tastes and priorities.
