Chefs Tekuna
Gachechiladze and Giorgi
Chincharashvili are jointly working over a new, innovatory project.
Georgian Fusion – modernized Georgian cuisine – can
already be deemed as one of the innovatory projects. As its author Tekuna
Gachechiladze says, “We are oriented to portion menu, where a person can taste
several dishes during one evening and prolong the pleasure. As far as my future
project is concerned, it will be related to healthy nutrition”.
It is beyond any doubt that the 19th
century menu was much healthier than the present one. Like the interior with
Georgian, French and Asian strokes, the menu is also quite mixed.
The key task of the project author was to restore
the menu of the 19th century Georgian aristocracy. Therefore, Chef
Tekuna Gachechiladze turned the wheel of time back, simultaneously modernizing
everything old.
Georgian dish Elarji, which is a favorite dish for
everybody, has been changed visually in Georgian Fusion. Its balls are rolled
in Panko Japanese bread crumbs. Bazhe made of almonds is also served together
with hazelnut sauce. This dish is a surprise for those persons, who are used to
traditional Elarji.
The favorite dish of the guests is a Senakian
suckling pig cooked under Beijing recipe. The suckling pig is processed under
the Chinese rule; it is put in salty water with species for 24 hours. Then, it
is dried and coated with spices. This dish should be ordered a day earlier.
Most of the ingredients have been found in Georgian
villages and special attention is paid to their quality and ecological
cleanness.
